A mostly standard vegetarian chili recipe, but jazzed up by the rich complementary flavors of fresh habanero pepper (a.k.a. "scotch bonnet" pepper), and Black Diamond cheddar. (Black Diamond is a brand of aged sharp cheddar which inspired this recipe.)
1. Dice onion and green pepper, saute in olive oil. If using ground beef (or soy beef), add to saute too.
2. Drain beans, add to skillet, along with diced tomato and some chopped cilantro leaves. Bring to a simmer.
3. Add salt, liquid smoke, worstershire, chili powder, and diced habanero pepper. Stir well, keep simmering.
4. Serve hot, with grated cheddar on top.
