Spinach/egg/cheese casserole (related to 'frittada').

Cook the spinach.
Mix all ingredients in a bowl; be careful not to cook eggs from overly hot spinach.
Oil a small 8x8 casserole dish, put in the mixture.
Sprinkle more grated cheese on top.
Salt to taste.
Bake at about 350 for 40 mins.

Variant: put in pasty crust, it's called "pastelle d'spinaca"
